Step-by-Step Instructions

  1. Knead the Dough: Mix semolina, flour, salt, sugar, and water. Knead thoroughly for 10–15 minutes until smooth, elastic, and non-sticky. Rest covered for 15 minutes.
  2. Form Dough Balls: Oil your hands and shape the dough into smooth, lemon-sized balls. Coat with oil and rest for 10 minutes.
  3. Stretch and Fold: Generously oil your work surface. Flatten a dough ball into a paper-thin circle using your oiled palms. Drizzle butter-oil mix and sprinkle a pinch of fine semolina. Fold top and bottom inwards, then left and right to form a square envelope.
