This usually happens if you kneaded the dough too much or cooked it over high heat for too long, evaporating all the moisture. Remember to only mix gently with your fingers!

Absolutely! Stuffed Harcha (Harcha Ma'amra) is very popular in Morocco. You can stuff the inside with cream cheese, herbs, or black olive paste before pan-frying.
