As the warmth of summer gently fades into the crisp breeze of October, there is no better way to embrace the autumn season in Morocco than with a steaming glass of fresh Moroccan Mint Tea (Atay).
In Moroccan culture, tea is much more than just a warm beverage—it is a symbol of hospitality, warmth, and togetherness. During the cool October evenings, preparing a traditional pot of tea brings comfort to every household.
Ingredients You Will Need
- 2 tablespoons Green tea (Gunpowder tea)
- 1 large handful Fresh spearmint leaves (*Na'na*)
- 3 to 4 tablespoons Sugar (adjust to taste)
- 4 cups Boiling water
Simple Preparation Steps
- Rinse the Tea: Add the green tea gunpowder to a traditional Moroccan teapot (*Berrad*), pour in half a cup of boiling water, swirl gently, and pour out the water to rinse the tea leaves.
- Steep: Pour the remaining boiling water over the rinsed tea leaves and place the teapot over low heat for 2 to 3 minutes until it boils gently.
- Add Mint and Sugar: Remove the teapot from the heat, stuff it with washed fresh mint leaves, and add the sugar.
- Mix and Pour: Pour tea into a glass and pour it back into the pot 2 or 3 times to mix the flavors naturally and create that famous, beautiful foam (*Rgaous*).
Pour from a high distance into delicate glasses, and enjoy your cozy October afternoon with some traditional Moroccan cookies or fresh bread!
