Looking for the ultimate refreshing yet flavorful Moroccan dish for summer? Zaalouk is a classic cooked eggplant and tomato salad that captures the vibrant spirit of Moroccan cuisine. Packed with garlic, olive oil, warm spices, and fresh herbs, this versatile dish can be enjoyed warm or chilled with crusty bread—making it the perfect summer side dish for barbecues, picnics, or light lunches.

Ingredients You Will Need

  • 2 Large Eggplants: Roasted or charred for a signature smoky depth.
  • 4 Ripe Tomatoes: Peeled, seeded, and finely diced.
  • 4 Cloves of Garlic: Minced.
  • 3 tbsp Extra Virgin Olive Oil: The aromatic base of traditional Zaalouk.
  • Spices: 1 tsp Ground Cumin, 1 tsp Sweet Paprika, ½ tsp Salt, and a pinch of Chili Flakes or Cayenne pepper.
  • Fresh Herbs & Lemon: 3 tbsp freshly chopped Cilantro and Parsley, plus 1 tbsp fresh Lemon juice.

Step-by-Step Instructions

  1. Char the Eggplants: Roast the eggplants directly over an open gas flame or under an oven broiler until the skin is blistered and blackened, and the inside feels soft. Allow them to cool, peel off the charred skin, and roughly chop the flesh.
  2. Sauté Tomatoes & Garlic: In a wide skillet over medium heat, warm the olive oil. Add the minced garlic and chopped tomatoes. Cook for 8–10 minutes until the tomatoes soften into a smooth sauce.
  3. Combine & Mash: Add the chopped eggplant, cumin, paprika, salt, cayenne pepper, and half of the fresh cilantro/parsley. Use a potato masher or wooden spoon to gently mash the ingredients together in the pan.
  4. Simmer & Reduce: Reduce the heat to low and let the mixture simmer uncovered for 10–15 minutes, stirring frequently, until any excess liquid evaporates and the texture becomes thick and dip-like.
  5. Finish & Serve: Stir in the fresh lemon juice and remaining chopped herbs. Drizzle with extra virgin olive oil before serving. Serve warm or cold with fresh Moroccan bread.
