Tanjia Marrakchia is the ultimate culinary icon of Marrakech. Historically prepared by working men on their day off, this hearty dish features tender cuts of beef or lamb slow-cooked to melt-in-your-mouth perfection inside an amphora-shaped clay pot. Infused with garlic, preserved lemon, cumin, and aged butter (Smen), it delivers a rich, concentrated broth and irresistible aroma.


Ingredients You Will Need

  • Meat: 1.5 kg (3.3 lbs) beef shank (gite) or lamb shoulder, cut into large chunks
  • Garlic: 1 whole head of garlic, peeled and lightly crushed
  • Preserved lemon (L'hamd Markad): 1 whole preserved lemon, quartered (pulp and rind)
  • Smen (Moroccan preserved butter): 1 tablespoon
  • Cumin: 1.5 tablespoons ground cumin (preferably freshly ground)
  • Ras El Hanout: 1 teaspoon
  • Saffron threads: 1 teaspoon (steeped in 1 cup of warm water)
  • Olive oil: 1/3 cup extra virgin olive oil
  • Water: 1/2 cup extra water (if needed)

Step-by-Step Instructions

Step 1: Marinate the Meat

  1. In a large bowl, combine the beef shank chunks, crushed garlic, preserved lemon pieces, cumin, Ras El Hanout, Smen, and olive oil.
  2. Pour in the steeped saffron water. Mix everything thoroughly using your hands so every piece of meat is well coated in the aromatic spices.

Step 2: Load and Seal the Clay Tanjia Pot

  1. Transfer the seasoned meat and all the marinade juices into a traditional clay Tanjia pot (or a heavy Dutch oven/slow cooker as an alternative).
  2. Cover the top opening of the clay pot with a sheet of parchment paper, followed by a layer of heavy-duty aluminum foil.
  3. Securely tie the paper and foil around the neck of the pot using thick string or wire, then poke a few small pinholes in the foil to let steam escape slowly.

Step 3: Slow Cooking (Traditional vs. Home Oven)

  1. Traditional Method: Take the sealed Tanjia to a local neighborhood wood-fired bathhouse (Farnatchi) to be buried in hot ashes for 4 to 6 hours.
  2. Home Oven Method: Preheat your oven to 160°C (320°F). Place the sealed Tanjia upright on the lower rack and bake slowly for 3.5 to 4 hours until the meat is incredibly tender and falls off the bone.

Step 4: Serving

  1. Carefully remove the string and foil cover (watch out for hot steam).
  2. Pour the contents directly into a large traditional serving dish.
  3. Serve piping hot with crusty Moroccan bread (Khobz) to scoop up the rich, gelatinous sauce.
