Step-by-Step Preparation Method
Step 1: Preparing the Almond Paste (Uqda)
Grind both the raw blanched almonds and the fried golden almonds together with granulated sugar in a food processor until a fine, smooth paste forms. In a large bowl, mix the ground almond paste with cinnamon, mastic gum, melted butter, and orange blossom water. Knead gently until smooth, pliable, and easy to roll into small, uniform balls (about the size of a walnut).

Step 2: Cutting and Folding the Pastry Triangles
Cut the Warqa or Phyllo pastry into long strips (about 5 cm / 2 inches wide). Brush each strip lightly with melted butter. Place a ball of almond paste near the bottom edge of the strip. Fold the bottom corner over the filling to form a triangle, then continue folding diagonally left and right along the strip to create a tight, sealed triangular packet.
