Boulfaf (also known as Boulfef) is one of the most iconic and cherished dishes in authentic Moroccan barbecue culture. Traditionally served during Eid al-Adha and special family gatherings, these delicious skewers feature tender pieces of grilled lamb or beef liver wrapped meticulously in thin, crisp layers of caul fat (crepine). Lightly seasoned with cumin, paprika, and sea salt, Boulfaf delivers a smoky, rich, and juicy flavor profile that captures the true essence of Moroccan hospitality.

Ingredients Required

  • 1 kg (2.2 lbs) Fresh lamb or beef liver (cut into thick slabs for initial searing).
  • 250g - 300g Lamb caul fat (crepine / veil fat), thoroughly cleaned and dried.
  • 2 tbsp Ground cumin (freshly ground preferred for maximum aroma).
  • 1 tbsp Sweet Moroccan paprika.
  • 1 tsp Chili powder or cayenne pepper (optional, for mild heat).
  • 1.5 tbsp Fine sea salt (adjusted to taste).
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes).

Step-by-Step Preparation Method

Step 1: The Initial Sear (Pre-Cooking)

Unlike regular kebabs, authentic Boulfaf requires searing the liver slabs first. Place the whole liver slabs over a medium-hot charcoal grill or stovetop grill pan for approximately 2–3 minutes per side. The goal is not to cook it through, but to firm up the exterior so it is easy to slice into clean, solid cubes.

Step 2: Cubing and Seasoning

Remove the seared liver from the grill and allow it to cool slightly. Cut the liver into uniform bite-sized cubes (roughly 2 cm / 1 inch). In a small bowl, mix the ground cumin, paprika, cayenne pepper, and sea salt. Lightly dust the liver cubes with half of this spice blend.

Step 3: Wrapping with Caul Fat

Lay the cleaned caul fat flat on a cutting board. Cut it into long strips roughly 2 inches wide. Wrap each seasoned liver cube snugly with one or two layers of caul fat, trimming off any excess heavy fat. Thread 4 to 5 wrapped liver cubes onto each skewer.

Step 4: Charcoal Grilling to Perfection

Arrange the skewers over glowing charcoal embers (medium heat). Grill for about 8 to 10 minutes, turning frequently, until the caul fat melts into a golden, crispy outer layer and bastes the liver underneath.   • Handling Caul Fat: Wash the caul fat thoroughly in cold water with a splash of vinegar or lemon juice to remove impurities, then pat it completely dry before wrapping.
  • Leftover Cooked Boulfaf: Store grilled leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in a dry skillet or oven to restore crispiness; avoid microwaving as it hardens the liver tissue.

Health Precautions & Who Should Avoid Boulfaf

While delicious and nutrient-dense, Boulfaf contains high concentrations of purines, saturated fats, and Vitamin A. Certain individuals should exercise caution or limit their consumption:

  • Individuals with Gout or High Uric Acid: Liver is high in purines, which can break down into uric acid and trigger severe gout flare-ups.
  • Heart Disease & High Cholesterol Patients: The combination of organ meat and caul fat makes Boulfaf high in dietary cholesterol and saturated fat. Those managing cardiovascular diseases or hyperlipidemia should limit portions or grill liver without fat wraps.
  • Pregnant Women: Liver contains exceptionally high concentrations of preformed Vitamin A (retinol). Excessive Vitamin A intake during early pregnancy can pose risks to fetal development.
  • Chronic Kidney Disease Patients: High protein and phosphorus levels in organ meats put extra workload on compromised kidney function.
